Cilantro Lime Chickpea Salad

Have you ever watched the show Hoarders? During the commercial break have you given it some thought and begun to realize with a teensy bit of horror that you might kinda sorta be a hoarder?

No?

What – No – Me neither…!

Except I’m totally a hoarder.

My daughter is 3 and a half and I have her playpen, walker, car carrier(s), swing, 2 strollers and all her baby clothes in the basement.

The kid hasn’t slept in her crib since she pulled an Evil Knieval and lunged (lunged!) out at 10 months of age, yet I still have it. Sitting there…

Empty…

As a reminder…

I store large cardboard boxes in our basement too. Am I planning to pack the little one and ship her to China? No… Well, maybe – I dunno. Maybe at some point I had the grand idea of building myself a fort.

I admit to nothing.

Oh – And my cooking magazines? Gosh, every one since 2006.

“Sigh”…

I always say I just haven’t gotten around to throwing things away – Or I’m totally going to make those recipes; But isn’t that what a typical hoarder would say?

Am I a hoarder?

Oh gosh – I need an intervention…

Quick – Before the cameras come!

I’m starting to hyperventilate.

I need a salad.

Yes, a salad. It’s so healthy. Healthy behavior, that’s what I need. I found it here. It will clear my mind and offset my hoarder behavior. Don’t question it – Just roll with me…

This salad has chickpeas, so there’s fiber in it. It’s gonna make us regular.

You’re starting to forget I’m a hoarder, aren’t you?

Crap – I just reminded you…

Quick – focus on this baby spinach!

Yes, this salad has spinach too. AND red onions. The spinach gets processed into teeny little bits; then it’s all tossed together.

Have you completely forgotten I’ve been hoarding cooking magazines since 2006?

What – No?

Let me distract you with a dressing.

This dressing has cilantro.

And LIMES! AND CHILI Powder!

It does…

It’s rounded out with a bit ‘o sugar, mustard, chili powder – And you’re not going to believe this – Finely grated garlic.

It’s blowing your mind… Oh, I know…

You pour the dressing over the chickpeas, onions, and spinach.

Toss it a bit.

Let it sit for 20 minutes.

Then you eat it.

It’s fresh.

It’s healthy.

It’s tasty-li-cious.

It’s a well-rounded healthy thang…

AND the dressing is so scrumptious that I made a few pints…

Pints currently hoarded in my fridge.

: Cilantro Lime Chickpea Salad

: Adapted From: Heather’s Dish

For the salad
  • 4 loosely packed cups fresh baby spinach
  • 2 cans chickpeas, drained and rinsed
  • 1/2 medium red onion, chopped small
For the dressing
  • Juice from 4 limes, about 4 oz of lime juice
  • 1 loosely packed cup of cilantro, stems removed
  • 3 Tbsp sugar
  • 2 Tbsp dijon mustard
  • 3-4 cloves garlic, finely minced or grated on a microplane
  • 1/2 (1 1/2 tsp) Tbsp chili powder
  • 1/2 cup olive oil
  1. Add the spinach to a food processor and pulse 3-5 times. (You can also chop the spinach very, very finely). Remove spinach from the food processor and add to a large bowl along with the chickpeas and onion. Toss together to combine and set aside.
  2. To the food processor add the lime juice, cilantro, sugar, mustard, garlic, and chili powder. Process this for a few seconds. Add the olive oil in a stream and process until it comes together, about 30-45 seconds. Add salt and pepper to taste.
  3. Pour either all or half the dressing over the chickpea mixture and stir to combine (I poured roughly half and stored the rest in the fridge).
  4. Let the salad sit for about 20 minutes at room temperature or overnight in the fridge to allow the  flavors to meld.

    I love the salad.  It looks awesome.
    I like that you have cooking magazines since 2006 — only 2006.  I started much earlier.  Don”t tell my husband, I store them in those huge rubbermaid tubs and tell him its bed linens and baby clothes.  Somehow hoarding bed linens and baby clothes is okay for him.

    Hahaha.  I’m actually not a hoarder, quite the opposite of a hoarder as a matter of fact.  I toss out everything.  But I love chick peas and everything about this salad sounds delicious.  It’s going in the to-do pile.  Oops, did I just say I had a pile of anything? :)

    I’m the same as Anita – I’m ruthless and chuck everything out. I need order and tidiness or I go MAD! I’ve eaten waaay too many chick peas this week, but yours look so delicious I may have to give it a go. Can you eat too many?

    That’s a funny post, made me laugh our loud.  My granddaughter is 3 and she is a hoarder.  We were going through the closet and every thing in there she wanted, asked me if she could take it home.  I looked in her suitcase and backpack, loaded down with treasures at least what were  treasures to her.  I watch that show also and I say t o my husband, are we hoarders.  Time to get rid of the record collection.  BTW, I love your salad, chick peas are favorite of mine.

    Beautiful, I love the cilantro dressing here!We make a similar chutney with cilantro, green chillies,garlic,lime juice,salt and oil…Yumm..I love the idea of spinach in chickpeas, so healthy and flavorful!Great recipe!

    No, no, I am not a hoarder either.  :)   I love the sound of this salad.  Have you tried Molly Wizenberg’s chickpea salad with basil and lemon and Parmesan.  (It is probably in one of the those Bon Appetits you are saving.)  :)
