DIY – Cinnamon Chips

I have a cut in the roof of my mouth and I can’t stop tonguing it. I keep telling myself; “Stop it, or it won’t ever heal!” but it seems my tongue has a mind of its own. It’s like a sneaky little joker. The second I’m not paying attention I feel the unsuspecting sting…

AND…

Ha, ha, ha…!

I hear it laughing, inflicting pain on me: The unsuspecting chick who is just minding her biz.

Devious little wayward tongue…

Sucks that I need it to speak and swirl my food from side to side, or it would get cut…

Ghetto style…

But I’ll get it one day…

*Sigh*…

My son loves Dunkin Donuts cinnamon swirl muffins. Two mornings a week I buy the kid a muffin on his way to school. As I hand him the muffin he shoots me a googly eyed look, and words of gratitude – Usually something along the lines of; “Yeah, baby – I got my muffin!”

That’s 11 year old gratitude… I take what I can get.

One day last week he looks at me and says; “Ma, you need to learn how to make these”…

*Sigh*…

It never fails… Those mofos always eat something – Then request I replicate, make it better, or put my touch on it… Basically, it’s so they don’t have to go further than the cookie jar or the cake stand.

Lazy mofos…

That’s what moms are for, I guess. That and to put Band-Aids on boo boos. Gosh, I wish someone would put a Band-Aid in the roof of my mouth.

I can’t concentrate properly today…

I have to admit, those Dunkin Donuts cinnamon swirl muffins are the bomb. They are hella moist with a crunchy crumb topping and bursts of cinnamon flavor; a flavor that can only be achieved by the addition of cinnamon chips.

How can I compete?

Now is the time to mention: I live in the hood… There are no cinnamon chips where I live. I don’t even think people bake around these parts.

True story: I couldn’t find cornstarch at the regular grocery store once. Who runs out of cornstarch? Ugh!

I even trekked it to the faraway land of the Upper East Side looking for cinnamon chips and gave up after 30 minutes of frantic searching. No chips, nowhere…

So screw it – I made my own.

Did you know you can make cinnamon chips with just 4 ingredients? Actually 5 – I added a little vanilla extract to bring out the cinnamon flavor. Did you know you can make your own cinnamon chips in 4 easy steps?

  • Mix
  • Spread
  • Bake for about 35 minutes
  • Break into chips

You’re done…

That’s it…

The cinnamon flavor in these chips is explosive – And that’s what you’re looking for.

What’s the absolute beauty of making your own cinnamon chips? If you run out, you can always bake some more… If you have all 5 ingredients and 5 minutes to mix, you’re golden…

Now if you’ll excuse me, I have to impress my boy with some cinnamon swirl muffins. I’m trying to score a googly eyed look. Oh, and I have to attend to this tongue, who with the stealth of a Ninja warrior is trying to make its way back into that dang cut.

: Cinnamon Chips

Why spend money when you can make your own cinnamon chips? If you have 5 minutes, you’ve got chips!

Ingredients:
 

  • 2/3 cup granulated sugar
  • 3 tablespoons ground cinnamon
  • 2 tablespoons vegetable shortening
  • 2 tablespoons light corn syrup
  • ¼ teaspoon vanilla extract
Directions:

  1. Preheat oven to 200F. Place a sheet of parchment paper on a cookie sheet and spray liberally with cooking spray. Set aside.
  2. In a medium size bowl, combine the granulated sugar, ground cinnamon, shortening, light corn syrup and vanilla extract. Mix with fork until the mixture is uniform and crumbly. Spread on parchment lined baking sheet, flattening with your hands and shaping into a rough square about 1/4 inch or so thick. Bake until mixture is melted and somewhat bubbly, about 35 minutes.
  3. Cool completely, and then cut into small pieces.
  4. Makes approximately 2 cups

Preparation time: 5 minute(s)

Cooking time: 35 minute(s)

    What a great idea to make them at home! I would’ve just given in and scraped my baking plans with cinnamon chips or substituted for something else. Good for you for taking matters into your own hands.

    Seriously?! This is amazing!!  I can almost never find them at the store, and when I do they are super expensive.  Oh the possiblities here…my 6 year old is cinnamon obsessed!!!
