I’m sort of habitual, especially when it comes to breakfast. I will happily eat the same thing for months at a time without giving it much thought. My kids, however… Lawd… These kids. One of the disadvantages to being a baker is the expectation of variety which extends beyond cookies and cakes. These non cooking, eating me out of house -n- home kids expect something different every time like I’m a damn magician. Fortunately for them, I am a damn magician and poof! Here’s a Bananas and Cream oatmeal suckas!

Now flow with me and let’s talk about this situation. I love oatmeal and flavored oatmeal is no exception. A few years ago I came across a post that used a flavored cream stirred into prepared oatmeal and it sparked a trove of flavors which I plan to share here over the next few months. Cream oatmeal is so much fun to make. You can make any type of flavored cream, and have a different bowl of oatmeal every day. But today, we’re going to talk about this breakfast because I know those ripe bananas are thisclose to going in the trash. Let’s save bananas today.

How to make this recipe

We begin with a Banana Cream. It’s pretty easy to make, you gather the ingredients and blend until smooth. This is what you need to make this situation:

Bananas Cream ingredients:

  • Chopped walnuts
  • Ripe bananas
  • Ground cinnamon, cloves, and ginger
  • Granulated sugar
  • Banana Liqueur (Seriously, you haven’t made this yet? What are you waiting for!)
  • Unsalted butter
  • Vanilla extract

Once the banana cream is smooth and ready, make your oatmeal. I like to make oatmeal the Dominican way – A bit of spice, lots of stirring, lightly sweetened. It reminds me of childhood mornings watching mami stir our oatmeal over the stove-top before a morning of cartoons . I urge you to make oatmeal *your* way; however, if you want to follow my full recipe for this oatmeal you will need,

These Oatmeal ingredients:

  • Whole milk ( I don’t do the skim or 1% thing)
  • Salt
  • A little ground cinnamon
  • Vanilla powder or extract
  • Unsalted butter
  • Granulated sugar
  • Old Fashioned Rolled Oats. Don’t use quick cooking here. We’re going to stir and stir.

In a medium saucepan, combine the milk, salt, cinnamon, vanilla powder, butter, and granulated sugar. Bring mixture to a boil over medium high heat. Reduce the heat to low and stir in the oats. Simmer the mixture and stir until the oats thicken. Once the oatmeal is ready you ladle into bowls, then stir in the banana cream. I like to add toasted walnut for a bit of crunch. I  leave that up to you.

 Tips for Making this delicious breakfast

How about milk substitutions? 

You can substitute the whole milk with any milk you wish. 

I am Vegan, can you suggest any substitutions for me?

I got you, boo! Feel free to use coconut cream as a substitute for heavy cream and omit the butter. Please note, using coconut cream will give the oatmeal a light coconut flavor. Feel free to substitute the whole milk in this recipe with nut or soy milks.

Can I store the Banana Cream in the fridge if I don’t feel like using it right away?

YES! This Bananas and cream oatmeal can be stored in a mason jar or Tupperware container. I would be remiss if I didn’t mention the surface of the banana cream will darken. Bananas release enzymes the second they come in contact with oxygen in the air. There is no way to prevent this and it doesn’t affect the taste of the cream at all. You can brush the surface with a bit of lemon juice to retard the browning. As a result, this may affect the flavor, therefore, brush sparingly. Another way to slow down browning is covering the surface of the cream with plastic wrap. 

Does the Banana Cream last long in the fridge?

The Banana Cream will last about a week and half in the refrigerator.

Do my bananas have to be ripe?

Not really. I personally love ripe bananas, however, you can puree bananas at any stage.

Ingredients

For the Banana Cream

  • 1/4 cup chopped Walnuts
  • 1 cup banana puree about 3 medium sized very ripe bananas
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 2 tablespoons granulated sugar
  • 2 tablespoons banana liqueur
  • 1/4 cup heavy cream
  • 1 tablespoon unsalted butter, melted
  • 2 teaspoons vanilla extract

For the Oatmeal

  • 3 cups whole milk
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground Cinnamon
  • 1/4 teaspoon vanilla powder (optional)
  • 1 tablespoon unsalted butter
  • 2 tablespoons sugar (optional)
  • 1 cup Old Fashioned rolled oats (not instant)
  • banana cream
  • toasted walnuts (optional)

Instructions

Make the Banana Cream

  • Combine walnuts, banana puree, spices, granulated sugar, heavy cream, butter, and vanilla extract in a food processor. Process until smooth and creamy, about 2-3 minutes. 
    Transfer banana cream to a container. Place plastic wrap on the surface of the banana cream and with a tight-fitting lid. Place in the refrigerator until ready to use. Banana cream will last about a week, covered, in the refrigerator.

Make the oatmeal

  • In a medium saucepan, combine the milk, salt, cinnamon, vanilla powder, butter, and granulated sugar (if using). Bring mixture to a boil over medium high heat. Reduce the heat to low and stir in the oats.
    Simmer the mixture, stirring occasionally until the oats increase in girth and the mixture thickens, about 10-15 minutes. Remove mixture from heat and stir in as much Banana cream as desired. Top with toasted walnuts. 
    Oatmeal recipe serves two. Banana cream serves four.
