These are my confessions: Up until 2 weeks ago, a waffle had never graced my lips.

I shared this on my Facebook page and people were really surprised.

NEVER had a waffle?!

WHAT?!

SERIOUSLY?!

Let me explain.

I’m Latina. We didn’t have waffles for breakfast, we ate mangu. Or cereal. By the time I saw a waffle up close, it was one of those frozen deals; the ones you put in a toaster and out comes breakfast. Waffles didn’t make sense to me. The texture looked off and I’m sort of weird about texture.

Wait – What – Crunchy on the outside, soft on the inside, and it’s not a cookie?!

No thank you.

Plus, the waffles I saw NEVER looked soft on the inside. Instead, waffles looked bland, in my mind closer to a rice cake; A rice cake you added syrup to.

No thank you.

Like so many things, I turned my nose up at waffles (I’m a snob, yo). I refused to own a waffle maker. If someone mentioned waffles in my presence I’d say, eeew and change the subject to pancakes. Or mangu.

I was about the pancake and mangu life. Get  out of here with your crunchy waffles situation.

That is until two weeks ago when I made my very first waffle.

I’ve been wrong THIS ENTIRE TIME.

I blame pancakes. I’m kicking pancakes to the curb until I can reconcile this whole pancake vs. waffles situation and why I waited so long.

This is my first waffle recipe, adapted from All Recipes. I had overripe bananas on my counter, so I made this a banana waffle situation.

Ingredients

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • dash of ground cloves
  • 2 large eggs
  • 1/2 cup Coconut oil
  • 1 3/4 cups milk
  • 3 tablespoons light brown sugar
  • 1 ripe banana mashed
  • 1 teaspoon vanilla extract
  • Maple Syrup for serving
  • Sliced bananas for serving

Instructions

  • Preheat waffle iron.
  • To a medium bowl add the all-purpose flour, baking powder, salt, and spices. Stir quickly with a fork to combine. Set aside. In a large bowl, using a hand beater or a whisk, beat the eggs until fluffy, about 2 minutes. Add the coconut oil, milk, sugar, mashed banana, and vanilla extract. Mix until combined. Add the flour mixture and mix until mostly smooth.
  • Spray waffle iron lightly with a non-stick cooking spray. Pour mix into waffle iron and cook until the waffles are golden brown. Serve hot with maple syrup and sliced bananas.
  • Makes 6 large waffles.
