So I took a break.
A break from recipe testing.
A break from writing about food.
I don’t remember the last time I posted a photo on Instagram.
These Crumbly Peanut Butter cookies? They’re old. I baked those weeks and weeks ago and because of my self-imposed hiatus, I never got around to posting them.
I have recently resumed recipe testing.
I’m writing a post.
So there’s that.
Why the break?
Mostly because my commentary was taking a political bent.
Politics has taken over every conversation we have these days. For or against this administration – Politics, taking sides, yelling and not listening – It’s the name of the game.
I’m suffering from politics and scandal fatigue.
But at the same time there are issues affecting my community which I should speak about.
Here’s the direction M.O.B. is headed:
I plan to write about recipes.
I will still inject humor into my posts. It’s what I do. Even when I’m angry I crack a joke.
I will write about issues important to me and to people of color.
I will weave this into the tapestry that is the new Mind Over Batter.
You can flow with me or not.
But I refuse to stand idly by, or pretend these issues do not affect us.
Because they do. Every single one of us. We don’t have to agree on politics to practice civil discourse.
It’s getting dangerous out here, folks. Never in my life have I seen friendships and relationships lost over our inability to agree on a political candidate, on our politics. Shit, we argue even when we’re on the same side. I don’t see it ending any time soon. I do want to contribute to the conversation in a civil manner. Maybe we can find some common ground. We have much more in common than we think.

I found these cookies on Martha Stewart’s website. This peanut butter dough is studded with peanuts. I went the unsalted route. I suggest you add some salted peanuts instead. The cookies are baked and no matter how long, they remain crumbly.
Definitely not a sandwich cookie.
These Crumbly Peanut Butter Cookies are for the hardcore peanut butter lover in your life. My son hates peanut butter cookies.
I say eff his feelings and I bake them often.
They’re that good.
Crumbly Peanut Butter Cookies
- All-purpose flour - 1 ¼ cup, spooned then leveled + more for flattening cookies
- Baking soda - ¾ teaspoon
- Cornstarch - 1 ½ teaspoon
- Unsalted butter - 1 cup (2 sticks) at room temperature
- Granulated sugar - ¼ cup
- Light brown sugar, packed - ¾ cup
- Smooth peanut butter - 1 cup
- Light corn syrup - 2 teaspoons
- Egg - 1 large
- Vanilla extract - 2 ¼ teaspoons
- Salted or unsalted peanuts - ½ cup
Preheat the oven to 350° Fahrenheit and line two cookie sheets with parchment paper. Set aside.
In a large bowl combine the flour, baking soda, and cornstarch. Whisk quickly to combine and set aside.
Add butter and sugars to bowl of an electric mixer fitted with the paddle attachment (hand mixer works here too). Beat over medium/high speed until light and fluffy, about 3 minutes. Add the peanut butter and corn syrup and beat until combined. Add egg and beat until combined, followed by the vanilla extract.
Reduce the speed to low and add the flour. Beat until just combined. Stir in the peanuts.
Remove bowl from mixer. Using a cookie scoop, drop dough by the spoonful on the parchment lined baking sheet, spacing the cookies at least 1 ½ inches apart. Dip the bottom of a glass with flour, tap off the excess a bit and use the glass to flatten the dough slightly. Make a crosshatch pattern on the surface of the dough with the tines of a fork.
Place cookie sheets in the oven and bake for 12-15 until the edges are lightly browned. Remove from the oven and allow the cookies to cool for about 10 minutes on the baking sheet. Using a spatula, transfer the cookies to a wire rack to cool completely.
Please note, these cookies are super crumbly. Handle with care.
Makes about 3 dozen cookies.
