I have a secret dream job. Two, actually.

One: I’ve always wanted to do cartoon voice overs. Think it will be so much fun. My speaking voice is annoying enough to make a great cartoon voice and would provide some diversity in the cartoon voice world. Cree Summer voices everything! I have at least 3 voices to contribute. I just haven’t figured out how to score a job like that. Is that something you can audition for? Are there job postings anywhere? ‘Cause I need a side hustle, big time. I don’t drive so Uber is out.

Two: I would love to create movie soundtracks. Some movies just suck in the soundtrack department. I get it, not every movie soundtrack can be as good as Grease, Dirty Dancing, Boomerang, or Pulp Fiction, Juice. It’s just… Sometimes a scene demands a little Gangsta’ rap, or some Bach and these soundtrack people are missing an opportunity. I can change the soundtrack game, you know. Do I have to work for the music industry? How do I get a hold of L.A. Ried?

Now flow with me, let’s talk about these Cinnamon Sugar Chocolate Chip Cookies.

I’ve been rolling all the things in cinnamon sugar lately. Cinnamon sugar is like a warm spice hug and I feel America needs a warm cinnamon sugar hug, politics aside.

I’ve wondered what a chocolate chip cookie rolled in cinnamon sugar would taste like and so I conducted an informal survey; meaning, I asked those freeloading kids who eat all my food and spend my money. They were super excited, because as I mentioned, rolling things in cinnamon sugar feels like a warm spice hug.

The cookie dough is adapted from Grandbaby Cakes with ground cinnamon worked into the sugar by hand before creaming. The dough comes together quickly, as dough tends to do. I used a cookie scoop, then rolled the dough by hand into balls which are dipped in cinnamon sugar and baked.

This cookie, bruh. What do the kids say? It’s LIIIIITTTTT. The cinnamon sugar caramelizes and you bite into a crunchy cookie which gives way to a soft baked center. A center with a chocolate chip in every bite and notes of warm cinnamon.

The crunch followed by the chewy center is addictive and as I mentioned, the cinnamon is the warm spice hug we need and crave.

Y’all need to be up on this situation. Christmas is in a few days and I’m pretty sure Santa would appreciate a few of these cookies.

I know (thumbs pointing at self) THIS Santa would. Now I’m off to draft L.A. Reid a letter in the hopes he’ll hire me to choose a bomb ass soundtrack for the next summer blockbuster.

Cinnamon Sugar Chocolate Chip Cookies

A crunchy cinnamon sugar outer coating gives way to a soft-baked gooey chocolate chip cookie. Grab a glass of milk, y’all!!!

Ingredients

For the cookie dough

  • cups spooned into the measuring cup then leveled All-purpose flour
  • 2 1/2 teaspoons Cornstarch
  • ¾ teaspoon Salt
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1/4 cup Granulated sugar
  • 1 ¾ cups Packed light brown sugar
  • 3/4 teaspoon Ground cinnamon
  • 1 cup Unsalted butter softened to room temperature
  • 1 large egg plus 2 egg yolks Eggs
  • 2 tablespoons Pure vanilla extract
  • 2 cups Semi-sweet chocolate chips

For the cinnamon sugar

  • 1/2 cup Granulated sugar
  • 2 1/4 teaspoons Ground cinnamon

Instructions

  • Preheat oven to 350° Fahrenheit. Line 2 cookie sheets with parchment paper and set aside.
  • To a medium sized bowl, add all-purpose flour, cornstarch, salt, baking powder, and baking soda. Whisk quickly to combine and set aside.
  • Place the sugars in the bowl of an electric mixer or a large bowl. Sprinkle the ground cinnamon over the sugar and work the cinnamon into the sugar with your hands until combined, about 1 minute or so.  Add the butter to the bowl, fit the bowl with a paddle attachment (hand whisk works well here too) and over medium/high speed, cream the butter and sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs and yolks one at a time beating the mixture well until fully incorporated. Add the vanilla extract and mix until combined. Stop and scrape the mixer to incorporate ingredients.
  • Turn the mixer off and add the flour all at once. Turn the mixer back on and beat on low speed until mostly combined. You should see some dry bits of flour.
  • Remove bowl from the mixer and fold in the chocolate chips, making sure to incorporate any dry bits of flour. Cover the bowl with plastic wrap and place in the refrigerator for at least 1 ½ hours.
  • Combine cinnamon and sugar in a small bowl. Remove the dough from the fridge. Scoop dough using a cookie scoop. With your hands quickly roll cookie dough into balls and roll those balls in the cinnamon sugar. Place cookie dough on the parchment lined cookie sheet about 1 ½ - 2 inches apart.
  • Place cookie sheets in the oven and bake cookies for 9-11 minutes. If the cookies look underdone, it’s cool. Remove cookie sheets from the oven and allow the cookies to cool slightly, at least 5 minutes. Transfer cookies to a wire rack to cool completely.
