I don’t want to take up a lot of your time.  I want you to think about your lunch situation. Not heavily, just in the back of mind somewhere. It’s coming soon. Lunch, I mean. I want you to think about lunch as you’re seconds away from elbowing that surprisingly strong 70 year old lady for that last pretty red clutch, or as you lay on the couch wiping drool from your chin, wondering how long it’s been since you’ve truly blinked.

This sandwich situation is centered around a Cranberry Orange Quick Jam I made last year. Or was it the year before? I can’t remember. Anyway, doesn’t matter. Let’s talk about this jam for a second. Since we’re Latino we don’t uphold many of the American Thanksgiving traditions.

For example, I don’t roast turkey. We roast pernil (pork) and chicken. I don’t make cranberry sauce, I make a cranberry orange quick jam; a jam that from beginning to end takes about 20 minutes to make.

We celebrate Thanksgiving in Spanglish. This Cranberry Orange Jam with its warm spices – canela, jengibre, clavos dulces, nuez moscada – is the true definition of Spanglish. And this sandwich, my friends – was built around this jam.

Now, I’m pretty sure you have some leftover turkey or chicken and while you plan to make soup or quesadillas with it, I’d like you to try this Cranberry Chicken Salad Sandwich. The chicken salad comes together pretty easily. It’s just a mix, plop, and assemble.

First we make our chicken salad. Break out your stash of shredded chicken. Instead of mayo I seasoned Greek yogurt with minced garlic, diced red onions, salt, and some dried onion and herb spice.  Fold the chicken into the seasoned Greek yogurt and toss some chopped apples for crunch.

Now here comes the good part. The assembly. Grab two pieces of bread. I’ll wait…

OK, now smear one piece of bread with Cranberry Orange Jam. Nice, right? OK, now dollop chicken salad on the other half. Put them together. Give it a lil’ mush. You want to see the cranberry orange jam seep out a little bit. Yeah… That’s it. Now take a hearty bite.

The very first thing that hits you are the spices, followed by the tart cranberries, then a hint of orange. And then there’s that perfectly seasoned chicken salad with a cool apple crunch. It’s Post Thanksgiving in your mouth.

Cranberry Jam Chicken Salad Sandwich

Ingredients

  • 1/2 cup Greek yogurt
  • 2 Minced garlic cloves
  • 2 tablespoons Diced red onion
  • 1/4 teaspoon or to taste Salt
  • 1/8 teaspoon or to taste Dried onion and herb powder
  • 1 cup Cooked shredded chicken
  • 1/4 - 1/2 cup Diced apples I used Gala
  • Cranberry Orange Jam
  • Bread wheat, white, whatever

Instructions

  • Add the Greek yogurt to a medium sized bowl. Add the minced garlic cloves, diced red onions, salt, and onion and herb powder. Whisk to combine. Taste and adjust seasonings if needed. Add the cook shredded chicken, followed by the apples and fold until combined. Place the chicken salad in a fridge for about 30 minutes. This will allow the flavors to meld. You can eat this situation right away. It's really good even without wait times.
  • To assemble:
  • Smear cranberry orange quick jam onto a piece of bread, preferably wheat. Dollop a couple of tablespoons of Greek yogurt chicken salad on the second piecce of bread. Sandwich that situation together and taste Thanksgiving in your mouth!
