The end of Daylight savings time…

The time of year when our clocks fall back an hour and we retrieve that hours’ worth of sleep we lost back in spring. You felt gypped in the spring, I know… I did, but I got my hour back and now my world is balanced, albeit spinning a bit faster than I’d like it to. Seriously, is anyone noticing that?

Are you one of those overachievers who goes around at 8pm the day before setting your clocks back an hour?

You know, just to be ready?

Pfft…

I’m not… My stove, microwave, and thermostats are still an hour ahead. I am grateful to cable boxes, iPods and smartphones. They do it on their own.

They’re well trained.

I’m not ashamed…

I change the times on my appliances when my visitors point it out; usually two, three weeks from now. Whenever – No rush… I’ve got like 5 months, right?

So… What did you do with that extra hour?

Did you actually sleep?

Did you… Oh, I don’t know – Recycle?

Did you exercise? You’ve been complaining about never having enough time in your day to exercise. Oh, wait – That’s me… Well, I hope you took advantage if that’s your deal.

Did you give your Barbie a Mohawk or figure out how to reverse the effects of global warming?

A lot can be done in an hour, that’s why I’m asking…

Sure you do…

I made caramel apples…

I stood in front of my stove, the one still on daylight savings time and watched as heavy cream, sugar, corn syrup, and cinnamon turned into caramel.

I watched it bubble…


And bubble…

And bubble…

Did I mention… Bubble?

I added butter and vanilla extract and my caramel was finally ready…

To dip a very small granny smith apple into… I swirled it…

I stared at my handy work…

AND I caught a stray bit of caramel on my palm because sometimes I don’t understand that just because caramel looks pretty it’s still 260 or so degrees…

Ouch…

Battle scars…

I cried a little…

I got over it once I took several bites of a now cooled caramel apple. Then spent the next 15 or so minutes getting caramel out m’ teeth…

But you know what? That’s how you Fall back…

Yes, you will be picking caramel with a hint of cinnamon out of your teeth for a bit, but it’s totally worth it!

  1. 24 small crisp Granny Smith apples
  2. 1 1/3 cups dark corn syrup
  3. 1 1/3 cups granulated sugar
  4. 1 1/3 cups light brown sugar
  5. 1 1/3 cups heavy cream
  6. 1/4 teaspoon salt
  7. 1 tsp ground cinnamon
  8. 3 tablespoons butter
  9. 1 1/2 teaspoons vanilla extract
  1. Line a baking pan with a generously (be real generous) oiled sheet of parchment paper. Push a candy apple stick into the core of each apple.
  2. Combine the syrup, sugars, heavy cream, cinnamon and salt in a large saucepan over medium heat. Simmer until the mixture reaches 270°F — about 20-25 minutes.
  3. Remove from heat, stir in the butter and vanilla. I found the best way to get perfectly coated apples is to reduce the heat to very very low and return the pot to the stove. This ensures the caramel doesn’t harden while you are dipping your apples. Dip an apple and gently swirl it into the caramel and place on the prepared baking sheet.
  4. Allow to cool completely. Then eat one and proceed to pick caramel out of your teeth for at least 10 minutes. It’s the nature of the game… Don’t fight it.
  5. Oh, and please don’t do something crazy like try to catch dripping caramel with your hands. You’ll hurt yourself… We don’t want that.
