That’s my subliminal way of telling you this cilantro lime rice is the bomb – That it’s kind of like the rice served in that fast food chain; the one with the person who wears a t-shirt announcing: “I made the guacamole today”.  Yea, that one… I always wonder if that person gets a pat on the back for a job well done.

My mind wanders sometimes…

If you want to make this rice, you totally rock. If you don’t feel like spending the like, 7 minutes it takes to prepare and prefer to eat this rice from that fast food chain, its cool… I ain’t mad atcha…

Except… Wouldn’t you want to be responsible for making a side dish that will make you bust out the jazz hands?

Did I just say bust out the jazz hands?

Cilantro Lime Rice {}

  • 3¼ cup water
  • 1 tablespoon salt
  • 2 cups long grain white rice, rinsed
  • 1 teaspoon of vegetable oil
  • 2½ tablespoons finely chopped cilantro
  • 4-5 tablespoons lime juice
  1. In a medium size sauce pan over medium/high heat bring 3¼ cups of water and salt to a boil. Add the rice and oil and allow to cook uncovered until the rice has completely absorbed the water and the grains of rice are slightly larger and have taken an opaque color. Reduce the heat to very low, cover the rice and allow to cook for about 15 minutes.
  2. Uncover the rice and run a heat-proof spatula or a metal spoon around the inside rim of the saucepan. Loosen any affixed rice, and fold the rice onto itself until any uncooked rice is in the bottom, and the completely cooked rice is on top. This may take about 2 folds to get all the uncooked rice to the bottom of the pot.
  3. Cover and allow to cook another 7-10 minutes. Uncover, add the cilantro and lime juice and fluff with a fork. Serve and enjoy.
