Cilantro Lime Chickpea Salad {}

Have you ever watched the show Hoarders? During the commercial break have you given it some thought and begun to realize with a teensy bit of horror that you might kinda sorta be a hoarder?


What – No – Me neither…!

Except I’m totally a hoarder.

My daughter is 3 and a half and I have her playpen, walker, car carrier(s), swing, 2 strollers and all her baby clothes in the basement.

The kid hasn’t slept in her crib since she pulled an Evil Knieval and lunged (lunged!) out at 10 months of age, yet I still have it. Sitting there…


As a reminder…

I store large cardboard boxes in our basement too. Am I planning to pack the little one and ship her to China? No… Well, maybe – I dunno. Maybe at some point I had the grand idea of building myself a fort.

I admit to nothing.

Oh – And my cooking magazines? Gosh, every one since 2006.


I always say I just haven’t gotten around to throwing things away – Or I’m totally going to make those recipes; But isn’t that what a typical hoarder would say?

Yes, a salad. It’s so healthy. Healthy behavior, that’s what I need. I found it here. It will clear my mind and offset my hoarder behavior. Don’t question it – Just roll with me…

This salad has chickpeas, so there’s fiber in it. It’s gonna make us regular.

Yes, this salad has spinach too. AND red onions. The spinach gets processed into teeny little bits; then it’s all tossed together.

Have you completely forgotten I’ve been hoarding cooking magazines since 2006?

What – No?

Let me distract you with a dressing.

It does…

It’s rounded out with a bit ‘o sugar, mustard, chili powder – And you’re not going to believe this – Finely grated garlic.

It’s blowing your mind… Oh, I know…

You pour the dressing over the chickpeas, onions, and spinach.

Toss it a bit.

Let it sit for 20 minutes.

Then you eat it.

It’s a well-rounded healthy thang…

AND the dressing is so scrumptious that I made a few pints…

: Cilantro Lime Chickpea Salad

: Adapted From: Heather’s Dish

For the salad
  • 4 loosely packed cups fresh baby spinach
  • 2 cans chickpeas, drained and rinsed
  • 1/2 medium red onion, chopped small
For the dressing
  • Juice from 4 limes, about 4 oz of lime juice
  • 1 loosely packed cup of cilantro, stems removed
  • 3 Tbsp sugar
  • 2 Tbsp dijon mustard
  • 3-4 cloves garlic, finely minced or grated on a microplane
  • 1/2 (1 1/2 tsp) Tbsp chili powder
  • 1/2 cup olive oil
  1. Add the spinach to a food processor and pulse 3-5 times. (You can also chop the spinach very, very finely). Remove spinach from the food processor and add to a large bowl along with the chickpeas and onion. Toss together to combine and set aside.
  2. To the food processor add the lime juice, cilantro, sugar, mustard, garlic, and chili powder. Process this for a few seconds. Add the olive oil in a stream and process until it comes together, about 30-45 seconds. Add salt and pepper to taste.
  3. Pour either all or half the dressing over the chickpea mixture and stir to combine (I poured roughly half and stored the rest in the fridge).
  4. Let the salad sit for about 20 minutes at room temperature or overnight in the fridge to allow the  flavors to meld.
