Tropical pineapple is heavily infused in vodka. Your cocktail game just went up another notch!
We’re about to rock out with our vodkas out. Whip them out. The vodkas, I mean.
Summers. They are for boozing. Every summer I tune into my inner moonshiner and come up with cocktails to keep you tipsy all summer long. You know, responsibly. I don’t want you drinking enough to cause cirrhosis of the liver or make bad decisions.
Flow with me. I wanna keep this short and boozy.
I’m on this “I need a vacation somewhere tropical” kick. I haven’t been on vacation in 4 years, people. You can’t blame me. And since it’s looking like I’m headed towards year 5 without a vacation – I’m going to make errthing tropical.
Vodka. Let’s infuse that situation. With pineapples. The jump off point? A pineapple simple syrup. Pineapples are pureed with sugar and water. You bring them to a boil, then simmer that jammy till it’s syrupy.
Once the pineapple syrup has cooled, you crush a whole pineapple and add it to a jar. Pour vodka over it. Any vodka will do. I prefer you NOT use the good shit you have hidden for special occasions. Feel free to use something in between shitty isopropyl alcohol vodka and good ass vodka.
Store it in a dark place, shake it once a day and let time do its thing. The longer the vodka sits, the more concentrated the pineapple flavor. I infused that vodka for about a month. I tend to store vodka in dark places and forget about it. For real. I once infused a vodka for like 8 months; found it when I stored another jar of vodka in the exact same place. It was good vodka.
Once your vodka is properly infused (be it one week or one whole month), strain the pineapple and immediately make yourself a bangin’ cocktail.
Pineapple Infused Vodka
- For the pineapple syrup
- Fresh pineapple cut into 1 inch chunks - 1 ½ cup
- Water - ½ cup
- Granulated sugar - ½ cup
- For the pineapple infused vodka
- Pineapple cut into 1 inch chunks - 1 large
- Pineapple syrup
- Vodka - 6 cups
Make the pineapple syrup:
In a blender combine pineapple chunks, water, and sugar. Puree until smooth. Transfer to a small saucepan and over medium high heat bring to a boil. Reduce the heat to low and allow the mixture to simmer until it has a syrupy feel to it, about 10 minutes. Skim the foam that has accumulated on top and set aside to cool completely.
Make the infused vodka:
Add the pineapple to a blender and pulse a few times to break down the chunks and crush the pineapple. Doesn’t have to be perfect, but make sure it’s not pureed. We need some pineapple pieces. To a ½ gallon mason jar add the crushed pineapple, pineapple syrup, and vodka. Seal the jar and give it a vigorous shake to combine.
Place in a dark place and give it a shake once a day for at least a week and as long as 3 weeks. The longer you leave it, the more infused the pineapple will become.
When your vodka is nice and infused, line a strainer with cheesecloth over a measuring cup with a lip and strain the pineapple pieces. Wrap the pineapple pieces in the cheesecloth and give it a few healthy squeezes. Pineapple holds A.LOT. of vodka and we want it all. Transfer the infused vodka to a mason jar and seal with a tight fitting lid and store in the refrigerator.
Makes about 1.5 quarts of infused vodka.
