So we’re a little over two weeks away from electing a new president and I’m all like, why can’t we just keep the one we have?

Yeah.
I expected this election to feel historic. The way it felt on November 4th 2008, Janis Joplin’s Me and Booby Mcgee soothingly played in my ears as I cast my ballot. The way it felt the next day when The Byrds’ Turn! Turn! Turn! played and with a spring in my step I embraced what I felt was a turning point in history. True change.

That’s is the purpose of a historic election. It is such a momentous event, that everything you did that day, no matter how mundane – Is forever branded into memory.

This election, though. Damn…  I should be celebrating. As a woman I should be happy as a pig in shit. We’re breaking a glass ceiling and the woman who is smashing the shit out it has more experience than anyone in politics. The woman who plans to break this ceiling is made out of cold hard steel.
But I’m not happy.
I’m not.
Why?

I’m a person of color and I feel our  future, as a collective is uncertain. In the course of one year we have regressed 50. We now see how thin the mask that hid racism really is – How easy, with just a few words, it was exposed.  I have legit fear no matter which direction the pendulum swings. And only time and action can assuage these fears.

For the first time ever, I feel we will not progress beyond this very stage.

I will cast that vote, though. Exercise my right.

I will wake up that morning. I will complete my early morning tasks, glad the kids are off from school and I don’t have to yell at them to get out of the shower – Or hurry up – Get dressed, we’re going to be late! I will hold onto my zen. Hold it with the Kung Fu grip of a jealous woman.

I will head outside on this historic day. It may rain. Or snow. Or the temps may shoot up to 90°. Though by then it will be November, climate change makes predicting weather so difficult.

I will head slowly towards the voting booth, feeling a combination of dread and shame – The shame you feel after a regretfully raunchy one night stand.
The memory will be forever branded in my brain, because that is what historic elections mean to do. I will remember how the air smelled, what I wore, what I listened to. I may never listen to that particular song the same way again. I’ll forever remember the tenor of each conversation; conversations I will try not to overhear on my way to work.

I will go about my day as if nothing’s changed.
But everything will change.
Everything.

I will head home after work and pop this Pizza Popcorn because pizza is comforting. And we will need pizza that day.

Except I can’t eat pizza because I’m trying to lose these jiggly thighs. So pizza popcorn it is! If your feelings mirror mine, Pizza Popcorn may be the one ray of sunshine on a day that will feel like a shit show.

This pizza popcorn has all the flavors of pizza – Tomato sauce, herbs, spices – And best of all, cheese.
And it’s super easy to make. You combine butter, sauce, herbs, and spices quickly in a bowl and pour it into popped corn kernels. Mix a bit by hand. The popcorn is baked until the sauce adheres and then cheese – Mozzarella and Parmesan – Are sprinkled over the whole dang thing.
Bake this on Election Day to soften the blow or to celebrate if you truly support either candidate. This is America, after all. I know you’ll be up until our new president is announced.

Savory Pizza Popcorn

All the flavors of pizza baked into popcorn kernels! Tangy tomato, aromatic basil, oregano, garlic powder and crushed pepper flakes are baked into popped corn kernels. And of course, vast amounts of cheese – Because pizza must always have cheese! Try this addicting Pizza Popcorn today!

Ingredients

  • 1 1/4 cup unpopped corn kernels
  • 3 tablespoons coconut oil
  • 2 1/2 tablespoons tomato paste
  • 1 tablespoon unsalted butter melted
  • 1 teaspoon dried oregano
  • 1 1/2 teaspoons dried basil
  • 3/4 teaspoon dried parsley
  • 1/4 teaspoon garlic powder
  • 3/4 teaspoon crushed red pepper
  • 1/2-3/4 teaspoon salt
  • 1/4 cup finely grated parmesan
  • 1/2 cup finely grated mozzarella

Instructions

  • Pop your kernels, old school style:
    Set the heat to medium-high. Add coconut oil to a large pot with a lid. Add the kernels and
    cover the pot. When you hear the first sound of kernels popping, reduce heat to medium-low and allow the kernels to pop completely.
    Every minute or so, give the pot a shake to ensure all your kernels have been hit with a heat situation (this will make them all pop). Remove from heat and set aside.
    You can choose to pop popcorn using a popcorn maker of choice. Personally, I swear by my Whirley Pop.
    Make the pizza sauce mixture:
    Preheat the oven to 250° Fahrenheit and line 2 (MUST BE 2, though 3 would be better!) cookie sheets with parchment paper and set aside.
    In a small bowl, combine tomato paste, melted butter, oregano, basil, parsley, garlic powder, crushed red pepper, and salt. Mix to combine. Taste to adjust seasonings.
    Pour the popcorn in a very VERY large bowl, followed by the pizza sauce mixture. With clean hands, mix to distribute the mixture into the popcorn kernels.
    Spread the popcorn kernels between the parchment lined cookie sheets and bake until mostly dry, about 8-15 minutes (depending on your oven), tossing every couple of minutes to help spread the pizza goodness.
    A couple of minutes before removing from the oven, sprinkle cheese evenly over the popcorn and allow to melt.
    Remove from oven and allow to cool completely.
    This popcorn is best enjoyed the day it’s made.
