I am over the static cling. Over the sparks, over shocking myself every single time I open a door or wrap myself with a throw. Seriously people –  I was thisclose from electrocution. Or so I believed. Finally, I am over this damn nasty slushy black snow that only serves to depress me.

I really hate complaining about this. Seriously – I’m reading this and am so not liking myself right now. But dammit – I’m still PTSD over last winter. I need a couple of not-so-cold-and-snowy winters to get used to being pummeled with snow and smacked in the face with windchills in the negatives.

Is that too much to ask? Can a sista’ get an Amen?

Let’s escape for a second. Flow with me to a land of warmth, campfires, and stories. A land where the ground is not covered by inches upon inches of snow. The land of s’mores. S’mores always remind me of August, where the temperatures are not sweltering, yet there is warmth in the air.

Back in September I made a Nutella S’mores dip for my son who returned from summer camp without having experienced s’mores by the fire. Since I am sans fire pit, I threw together some chocolate chips, Nutella, topped it with marshmallows, melted it in the oven, and gave my boy his s’mores experience.

Now I’m bringing you yet another s’mores experience, in mini form. I purchased these mini cast iron skillets long ago (in 2012), and thought them a perfect vessel to hold what is the best combination since spaghetti and meatballs: Melted chocolate and peanut butter.

Oh, yeah… You heard correctly. I made a simple sweet peanut butter spread that tastes like the inside of a peanut butter cup with peanut butter, confectioners’ sugar, butter, and vanilla extract. I covered the bottom of 4 mini cast iron skillets with chocolate chips, then dolloped mini scoopfuls of peanut butter spread and finally topped with marshmallows. This was melted in the oven and immediately devoured with the aid of graham crackers.

From beginning to end this takes less than 12 minutes. You don’t have to use mini cast iron skillets, though they are cute as hell. You can use ramekins or any small oven proof dish. The recipe can also be doubled or tripled depending on how many people you plan to s’more. Yeah, it’s a verb now. Dig it.

The best part is, you have your own little s’mores dish full of melty chocolate, peanut butter, and marshmallow goodness. No need to share. Plus you can double, triple, or quadruple dip as you please.

Ingredients

For the sweet peanut butter spread

  • 2 tablespoons Creamy peanut butter
  • 2 teaspoons Unsalted butter room temperature
  • 2 tablespoons Confectioners’ sugar
  • 1/2 teaspoon Vanilla extract

For the s'mores dip

  • 2/3 cups Semi sweet chocolate chips*
  • Peanut butter cup spread
  • 10, cut in half Marshmallows
  • Graham crackers for dipping

Instructions

  • Make the peanut butter cup spread:
  • In a small bowl, combine the peanut butter, unsalted butter, confectioners' sugar, and vanilla extract. Mash with a fork and mix until combined. Set aside.
  • Make the s'mores dip:
  • Preheat the oven 450 degrees Fahrenheit.
  • To 4 3.5 inch mini cast iron skillets (you can use ramekins here), add the semi sweet chocolate chips, making sure to cover the surface of the skillet or ramekin completely. Dollop small amounts (I used a mini cookie scoop) of peanut butter cup spread over the chocolate chips. Arrange the marshmallow halves over the peanut butter cup spread and chocolate chips to cover the surface of the skillet. Place skillet in the oven for 6-7 minutes until the marshmallows have expanded, melted, and browned.
  • Remove from the oven, allow to cool for a minute, then have at it with some graham crackers.
