When I think of lavender oftentimes my brain conjures up images of old ladies and sachets stuffed inside bra padding. Lavender = Old lady smells. In my late teens I worked part time in a home goods store. What I remember most about that time is heavily disliking the scent of lavender anything. I was 19. Old lady scents was something I associated with my grandma – And being so far removed from reaching grandma status at the time, I felt lavender was not the move.

Then shit changed on me, homies. Suddenly I’m thinking, “Lavender s’not so bad”. And that means one thing: I’m approaching sachet stuffed inside my bra status, people. I’m getting older and am one year closer to spending my days knitting and playing bingo wearing my crooked white afro wig, hot pink visor, and looking at you over my half-moon spectacles.

These Blueberry Lavender Parfaits begin with a whole messa blueberries. 2 pints, to be exact. The blueberries are sweetened with a mix of lavender vanilla sugar and regular old granulated sugar. I buy my lavender vanilla sugar from the Spice House, in case you’re wondering. A little lavender goes a long way, here. Don’t be tempted to add more than a couple of tablespoons; otherwise it will feel like a mouthful of soapy blueberries.

The blueberries are set aside for about 30 minutes and then you make a quick vanilla flavored sweetened whipped cream and then you assemble this jammy. First you add a couple of tablespoons of these lavender sweetened blueberries, followed by a generous piping of sweetened whipped cream. Finally, you top with more blueberries. It’s heaven.

These parfaits are light, airy, and fruity. The lavender scent is intoxicating and the flavor, though not detected in every single bite is ambrosial. It’s like walking through a field in one of those a light flowy summer dresses. These Blueberry Lavender parfaits are extremely easy to put together, perfect for summer, and if I must say so – The pairing here is fancy in the “Older Ladies Who Sit Around And Have Tea” sort of way. I guess I’m about that life right now. Next I’ll be going into Lenscrafters for my half-moon spectacles.

Ingredients

Lavender blueberries

  • 2 pints Blueberries
  • 2 tablespoons Lavender vanilla sugar
  • 1-2 tablespoons Granulated sugar
  • 1 teaspoon Vanilla bean paste

Vanilla bean whipped cream

  • 2 cups cold Heavy Cream
  • 1 ½ cups Confectioners’ sugar
  • 2 teaspoons Vanilla bean paste

Instructions

  • Prepare the lavender blueberries:
  • Wash and pat dry blueberries. Add blueberries to a medium bowl and sprinkle lavender sugar over them. Add the vanilla bean paste and mix until combined. Set aside covered in room temperature for about 30 minutes.
  • Make the vanilla bean whipped cream:
  • To a bowl of an electric mixer fitted with a whisk attachment (hand mixer works here as well), over medium/high speed whip about 1 cup of heavy cream until slightly thickened. Add the second cup of heavy cream and whip until it forms medium peaks.
  • Turn off the mixer and add the confectioners’ sugar and vanilla bean paste. Turn the mixer on low speed and whip until the confectioners’ sugar is mostly combined. Increase the mixer speed to high and whip until completely thickened and the mixture forms stiff peaks. Spoon into a large piping bag fitted with a large star or round tip and place in the refrigerator until ready to use. Don’t have a piping bag? I got you, boo. Add the whipped cream to Ziploc bag and snip a hole in the corner when ready to use.
  • Assemble the parfaits:
  • To 5 ounce dessert bowls, add a couple of spoonfuls of lavender blueberries and syrup. Pipe vanilla whipped cream over the berries until you reach the top of the dessert bowl. Top with more lavender blueberries and syrup.
  • Makes six, 5 ounce parfaits.
